Fall & Winter Sweet Potato Porridge

This sweet potato dish is very nourishing and improves a Deficient Stomach/Spleen condition and benefits a Deficient Kidney situation. It would be an excellent dish for anyone recuperating from a long illness or in a weak postpartum situation. It is a Deficiency Tonic for both Lungs and Kidneys. It’s a wonderful dish for colder days during the fall or winter

This takes eight hours (or overnight) to prepare and serves two large or four small portions.

1 Carrot, cut in very thin half moons

Job's Tears / Coix Seed

½ lb. Yam or Sweet Potato, sliced thin

5 cups Water

1 cup white Rice

¼ cup Job’s Tears (Coix Seed, also called ‘Yi Yi Ren’)

3 or 4 chopped dried Longan Fruits (also called ‘Long Yan Rou’)

¾  tsp. Salt (or more to taste)

Few dashes Roasted Sesame Oil

Honey, to taste

1) Cut carrot and yam as directed and simmer all ingredients except the salt and sesame oil with 5 cups water for seven to eight hours or overnight.

2) Stir in salt and sesame oil and serve warm, with a little honey if desired.
